Sunny Day
As you know I live in the sunshine state, but this past summer you couldn't tell, it rained so much. But the weather has cooled off and the humidity has gone and it has been beautiful here in north Florida. I have been working on some projects some I can't show as they are presents. But I did finish a big one a blanket and I really liked the colors in it, also today me am and my grandson went and enjoy the nice weather here and had a good time at the park. I am flying out to Az for 10 days hoping to hit all my favorite spots the Attic being one of them, so till then keep those fingers moving and enjoy the pictures.

Recipe for Tom Kha soup
I have had request for this recipe, I have taken the basic recipe and added to it,,so here goes my version and I will tell you, you will not be disappointed...
Tom Kha Soup
1 carton of low sodium chicken broth
1 can of coconut milk
1/2 bag of shrimp or 2 boneless skinless chicken breast raw/chopped into nice size chunks
1Tbl of red curry paste
1Tbl of red chile sauce-more if you like it hotter
1/4 c of fish sauce
2Tbl oil
1 small chopped onion
2-3 cloves of garlic chopped
2 lemon grass stalks(white part only)-get this in Asian store
6 slices of fresh ginger-peeled
Chopped fresh basil
1 c of sliced mushrooms
In a soup pan heat oil and then add ginger and lemon grass sauté for 2 minutes then add onion and garlic and sauté another 2 minutes
Add broth,coconut milk,then the rest of the ingredients stirring after each item, bring to boil and turn down heat and simmer till meat is cook,,serve and enjoy.
If you do make it p,ease let me know if you like it or how you change it up..
P.S I forgot to say you don't eat the lemon grass, really tough and if you like ginger you can eat it or take it out also ...

Been busy in the kitchen
This morning I had energy and want to bake something so cranberry scones it was and it was the day to make my Tom Kha soup, I have been making this soup every week for the last 5 weeks it is so good and addicting, and now I have my neighbor craving it. I also started another scarf this one is Christmas present. Well I hope you all are having a great week so far. Till next time take care and keep those fingers moving.

It is feeling like fall
